A Memorable Thanksgiving Dinner in the Philippines
Finding myself in the Philippines on Thanksgiving this year, I went to a christening party for the new offices of Golforce Inc., a company that provides golf course construction and maintenance services in Asia. We didn’t gather around to watch the carving of a turkey — we crowded round the carving of the Cebu-style lechon baboy and ate this roast suckling pig in short order. No leftovers from this pig on the day after Thanksgiving!
I found that the Golforce employees are not only skilled at building golf courses. They are also excellent cooks. Along with the lechon baboy we had squid and tilapia and tuna, pancit canton and other noodle dishes, chop suey, rice, fruit, cake, and a few bottles of San Miguel, the only beer that nourishes true Filipino friendships.
